September has been National Potato Month and there is just enough time left to note the highlights of the potato!


Potatoes are a healthy vegetable, they are filling, inexpensive, and easy to obtain and store. Potatoes are loaded with vitamin C, more potassium than a banana, folate, B6, and a bit of protein. Potato skins add fiber to a meal and potatoes only have about 110-160 calories for medium sized potato with skin. They are great with any herbs and spices. Potatoes can be a healthy part of a balanced diet especially if eaten with minimal fats or high calorie toppings. Potatoes are healthiest if not eaten as potato chips, French fries or tater tots! Try baking, roasting, air frying or microwaving instead.
